CAN YOU SAY THAT 18-8 STAINLESS STEEL IS A 300 SERIES STAINLESS STEEL??

Based on MIL-HDBK-5G, page 2-211, 18-8 is a 300 series stainless steel (more specifically it is Type 302).

Yes, 301, 302, 303 and 304 stainless steel designations are 18/8 stainless steel. The 18/8 nominally contains 18% chromium & 8% nickel with the remainder varying depending on desired properties.
