Galvanised steel working temperature Question

Can anyone tell me why the electolytic protection of steel provided by zinc does not work at high temperatures. At what temperature does it stop working? Why is it common practice to coat steel with aluminium for high temperature aplications (eg engine exhaust systems)? Any response, however technical or simplified, concise or otherwise, would be most welcome.
